I have always loved making caprese ever since my mother first introduced me to it. One day I was looking for something easy to cook for dinner with Lucy and stumbled upon a simple caprese chicken recipe. While a good start, it needed a few tweaks. I am happy to share the result with you today!
This is an easy to make chicken covered with gooey fresh mozzarella cheese melted, tomatoes, and fresh basil.
- 1 Part Balsamic Vinegar
- 1 Part Olive Oil
- 1 Part Honey
- 1.5 Tsp Herbes De Provence
- 1/2 Tsp Paprika
- 1/8 Tsp Cayenne Pepper
- 1/2 Tsp Salt
- 1/4 Tsp Black Pepper
- 1/2 Tsp Garlic Powder
- 2-3 Pieces Chicken Breasts
- 1-3 Pieces/Breast Mozzarella Cheese
- 1 Cup Cherry Tomatoes
Marinade the chicken
Mix the marinade and let the chicken sit for 1-12 hours in the refrigerator
Dry rub prep
Combine all the dry rub ingredients in a small bowel.
Cover chicken with dry rub
Preheat the oven to 400 degrees.
Lightly oil an oven-safe pan such as a cast iron skillet and bring up to medium-high temperature on the stove.
Sear the chicken on both sides until golden brown, about 3 minutes each side.
Put the pan into the oven and bake until the chicken is 165 degrees internally. This should be about 20 minutes.
Remove the pan/chicken from the oven and add fresh mozzarella cheese. Place back into oven until the cheese has melted to your taste.
Remove the pan/chicken/cheese from the oven and add tomatoes, basil, and balsamic vinegar. Serve hot!
